WHY IS MY ?01 CHEVY MALIBU GETTING HOT AFTER CONTINUOUSLY PUTTING WATER/DEX COOL IN IT?

Why is my '01 Chevy Malibu getting hot after continuously putting water/Dex Cool in it? It would go empty, can't see any leaks, then fill back up, filled it up again and now it sputters and almost jumps...is it the thermostat?
